
In one bowl combine coconut oil, olive oil, water, honey and molasses until mixed together.
In a second bowl combine oat flour, ginger and cinnamon and mix together.
Slowly add the first bowl into the second bowl until all combined. This should form a very soft dough. (It may look a little runny, this is ok)
Pour mixture into a clean bowl and cling wrap. Or separate mixture into 2 bowls and cling wrap.
Place in fridge for 3 hours.
Pre-heat oven to 180 degrees.
Remove chilled dough, sprinkle some flour out on bench and roll out mixture to approx 0.7 cm thick.
Using your gingerbread cookie cutter, cut out and place on lined baking tray.
Bake for approximately 10-15 minutes or until nicely golden brown.
Once out of the oven and cooled down you can start decorating your gingerbread man with the writing icing and decorations.
