Pre-heat oven to 180 degrees.
Place sweet potato, 3/4 of bacon bits, 1 cup oat flour, coconut oil and cinnamon in a mixing bowl and mix until dough like.
Sprinkle the remaining oat flour out onto the bench and roll out mixture using a rolling pin until 1 cm thick.
Using the cookie cutters, cut out the mixture and place on a baking tray lined with baking paper.
Using remaining bacon bits, decorate the treats to your liking.
Place in oven for 10-12 minutes or until golden brown.
Leave out a few bits of bacon for decoration.
